Easy Gimbap with Stir-fried Kimchi, Ham, and Burdock Root
Tired of no eggs in the fridge, or don’t feel like grilling fish? When you’re struggling for meal ideas on a hot day, look no further! This recipe uses readily available ingredients like gimbap ham and seasoned burdock root, combined with flavorful stir-fried kimchi, to create a simple yet delightful gimbap. Perfect for a quick breakfast or a light meal.
Gimbap Ingredients- 2 bowls of cooked rice
- Pinch of salt
- Pinch of sesame seeds
- 1/2 Tbsp sesame oil
- Well-fermented kimchi
- 1/2 Tbsp sugar or corn syrup
- 50g seasoned burdock root (store-bought)
- 2 sheets of gimbap seaweed (nori)
- 1/2 sheet of gimbap ham
Cooking Instructions
Step 1
Prepare the rice for the gimbap. In 2 bowls of warm cooked rice, mix in a pinch of salt, a pinch of sesame seeds, and 1/2 Tbsp of sesame oil. Since the kimchi and burdock root are already seasoned, keep the seasoning for the rice light.
Step 2
Make the stir-fried kimchi. Remove the excess liquid and seeds from the kimchi, then chop it finely. Sauté the chopped kimchi in a pan, adding 1/2 Tbsp of sugar or corn syrup to create a sweet and tangy stir-fried kimchi. Ensure the kimchi is thoroughly stir-fried to reduce moisture and prevent it from being too watery.
Step 3
Roll the gimbap. Spread the prepared rice thinly over a sheet of gimbap seaweed. Place the stir-fried kimchi, ham, and seasoned burdock root in the center. Roll the gimbap tightly to prevent it from falling apart, but be careful not to press down too hard on the fillings. Finally, brush the outside of the gimbap with a little sesame oil and sprinkle with sesame seeds for extra flavor and aroma.
