As the weather gets warmer, cooking over a hot stove can feel like a chore. But we still need to eat, so I find myself looking for quick and easy recipes. Even though I don’t usually love mushrooms, my kids seem to eat them better when I add enoki mushrooms, so I’ve been using them more often. I added plenty of enoki mushrooms to this stir-fry and also included Spam and crab sticks, just in case! It seems I might have overdone it with the enoki mushrooms, as they mostly picked out the Spam. Still, I think it’s a good portion for a mushroom dish, and I was amused by their strategy! Ultimately, the rest was up to me. Thankfully, it wasn’t a huge batch, so it wasn’t too much. It tastes good, though I personally prefer when the strong enoki mushroom aroma is a bit more subtle. This super simple stir-fry, which can be made quickly, is highly recommended for those who enjoy enoki mushrooms. Have a delicious weekend! ♡

Main Ingredients

  • 2 packs Enoki mushrooms
  • A little Mild Spam (canned ham)
  • 3 Crab sticks (imitation crab meat)

Seasoning & Others

  • 2 Tbsp Oyster sauce
  • 2 Tbsp Grapeseed oil
  • Salt (to taste)
  • Pinch of Black pepper
  • Sesame seeds (for garnish)
  • Sesame oil (for finishing)
  • Scallions (chopped, for garnish)

Cooking Instructions

Step 1

Prepare the enoki mushrooms by trimming off the root end. Gently rinse them under running water and pat them dry. This process removes any dirt and ensures they are clean and ready to cook.

Step 2

Slice the Spam into bite-sized pieces, preferably in long strips. Slicing them not too thick will help them absorb the seasonings better and cook more evenly.

Step 3

Shred the crab sticks lengthwise with your fingers. Shredding them this way makes for a more tender texture in the stir-fry.

Step 4

In a wide pan or wok, combine all the prepared ingredients: enoki mushrooms, Spam, and crab sticks. Drizzle in the grapeseed oil. Stir-fry over medium heat until the ingredients are well combined. You don’t need to cook them extensively at this stage.

Step 5

Once the enoki mushrooms begin to wilt slightly, increase the heat to high and stir-fry quickly. Add the oyster sauce, salt (to your preference), and a pinch of black pepper. Continue to stir-fry rapidly until the seasonings are evenly distributed. Finally, add sesame seeds, a drizzle of sesame oil, and the chopped scallions, and give it one last quick toss before serving.

Step 6

Transfer the delicious stir-fried enoki mushroom, Spam, and crab stick mixture to a serving plate. It’s best enjoyed immediately while it’s warm.
