Main Ingredients- Napa cabbage (or regular cabbage) about 200g (approx. 1/6 of a small head)
- Water 250ml (1 mug)
- Soybean paste (miso) 1 Tbsp
- Dried anchovy powder (or anchovy broth) 1 Tbsp
- Red pepper flakes (Gochugaru) 1 tsp
- Minced garlic 1/2 Tbsp
- Chopped green onions, a handful
Cooking Instructions
Step 1
First, prepare the cabbage. About 200g is roughly 1/6 of a small head, which is a good portion for a single serving. Wash the cabbage leaves thoroughly and then cut them into bite-sized pieces. Aim for medium-sized pieces, as cutting them too small might cause them to break apart while cooking.
Step 2
250ml of water is approximately 1 mugful. This is a suitable amount for a single serving of soup. You can use a measuring cup or a mug to measure it out.
Step 3
Now, pour the prepared 250ml of water into a small pot or saucepan (like a ramen pot). Add 1 Tbsp of anchovy powder, 1 Tbsp of soybean paste, 1/2 Tbsp of minced garlic, and 1 tsp of red pepper flakes. Stir well to dissolve the soybean paste, breaking up any clumps, then bring it to a boil over high heat.
Step 4
Once the broth is boiling vigorously, add all the chopped cabbage. Stir to ensure the cabbage is submerged in the liquid. Then, let it simmer with the lid slightly ajar for 3-4 minutes. This cooking time will soften the cabbage nicely and allow the flavors to meld beautifully.
Step 5
Finally, add the handful of chopped green onions and simmer for another minute to complete your delicious Napa Cabbage Miso Soup! Cooking for just about 1 minute after adding the green onions is perfect. If you like a little heat, you can also add some chopped chili peppers for extra spiciness.
