Quick & Easy Fridge-Raiding Rabokki

Lunchtime! This Rabokki was made for my daughter who’s taking online classes. I’ve become too lazy to go grocery shopping, so I’m constantly raiding the fridge. Cooking time? About 10 minutes.

Main Ingredients

  • 2 cups water
  • 1 serving ramen noodles
  • Scallions, a handful
  • Garlic (optional, for flavor)
  • 1/2 serving jjolmyeon (Korean chewy noodles, optional)
  • 1-2 hard-boiled eggs
  • 2-3 frozen dumplings
  • Sliced ham or sausage, a bit

Spicy & Sweet Sauce

  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1/2 Tbsp minced garlic
  • 1 Tbsp corn syrup or rice syrup
  • 1 Tbsp sugar (adjust to taste)

Cooking Instructions

Step 1

First, pour 2 cups (about 400ml) of water into a pot and bring it to a boil over high heat. While the water is boiling, prepare your ramen noodles and jjolmyeon noodles (if you have them). Don’t be too disappointed if you don’t have tteokbokki rice cakes; you can still make a delicious rabokki without them!

Once the water is vigorously boiling, add the ramen noodles. From this point on, speed is key! You need to quickly get ready to make the sauce before the noodles get too soft. If you’re a bit unsure about making the sauce on the fly, it’s a good idea to prepare the sauce mixture before adding the noodles.

In a bowl, combine 1 Tbsp gochujang, 1 Tbsp gochugaru, 1/2 Tbsp minced garlic, 1 Tbsp corn syrup (or rice syrup), and 1 Tbsp sugar. Mix everything thoroughly until well combined. You can adjust the amount of sugar to your preference. The crucial part is to mix the sauce quickly before the ramen gets mushy!

Pour the prepared sauce mixture into the pot with the bubbling ramen. Next, add the jjolmyeon noodles you prepared. If you have dumplings and ham (or sausage), add them now. Using up ingredients from the fridge is the essence of ‘fridge-raiding’ cooking!

Finally, add a generous amount of chopped scallions. The fresh, aromatic flavor of the scallions will further enhance the taste of your rabokki.

If you have hard-boiled eggs that you cooked beforehand, or any leftover eggs in the fridge, add them now. Feel free to adopt a ‘whatever I see in the fridge, I’m adding it!’ mindset and boldly add ingredients following your intuition. That’s the charm of this fridge-raiding rabokki!

Simmer for another minute or so, allowing all the ingredients to meld together beautifully. Since we added the ramen noodles from the beginning, the cooking time is short and the dish comes together quickly. Enjoy this delightful rabokki while it’s hot and fresh! The sooner you eat it, the better it tastes!
