Have leftover radish after making kimchi? Don’t let it go to waste! With this recipe, you can whip up a crispy, sweet, and tangy radish salad in no time, without the usual salting process. Main Ingredients- 1/4 medium radish (approx. 300g)
- 1 Tbsp chopped chives or green onions
Cooking Instructions
Step 1
First, gather all the ingredients needed for your delicious radish salad. Having the washed radish, chives (or green onions), and measured seasoning ingredients ready will make the cooking process much smoother.
Step 2
Wash the radish thoroughly under running water; you can leave the skin on. Start by slicing it into thick pieces about 1cm thick, then thinly julienne it to about 0.3cm thickness. You’ll know you have enough if the julienned radish fills a rice bowl completely (approximately 300g).
Step 3
Place the julienned radish in a large bowl. Add 1/2 cup of gochugaru and gently mix with your hands, massaging it in. It’s important not to overwork it; the goal is to evenly coat the radish with a beautiful red color. Mix gently for about 1-2 minutes.
Step 4
Once the radish is beautifully colored with gochugaru, add the remaining seasoning ingredients: 1/3 cup sugar, 1/3 cup fish sauce, 1/3 cup minced garlic, 1/3 cup vinegar, 1 Tbsp chopped chives, and a pinch of sesame seeds. Gently mix everything together again with your hands until well combined. The key is to mix gently so the radish doesn’t become mushy. Your Baek Jong Won-style radish salad, with its perfect balance of sweet, sour, and spicy flavors, is now ready!
