Tteokbokki Ingredients- 1 serving of Tteokguk tteok (rice cake for soup, about 150g)
- A handful of green onions or scallions, chopped
- Cabbage, roughly the same amount as the rice cakes, chopped into bite-sized pieces
- 2 slices of processed cheese
- A generous handful of mozzarella cheese (adjust to your preference)
- A pinch of sesame seeds (for garnish)
Tteokbokki Seasoning- 1 Tbsp sugar
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp soy sauce
- 1/2 Tbsp gochugaru (Korean chili flakes)
- 1/2 Tbsp corn syrup (for shine and sweetness)
- 1 Tbsp sugar

Cooking Instructions
Step 1
Place 1 serving of Tteokguk tteok (rice cakes for soup) into a pan you’ll be using for cooking. Add enough water to cover the rice cakes so they don’t stick together.
Step 2
Prepare the vegetables: chop the cabbage into bite-sized pieces similar to the size of the rice cakes, and finely chop the green onions or scallions for a fresh aroma. Set these aside for now.
Step 3
Place the pan over medium heat. Once the water begins to boil, add all the prepared seasoning ingredients: 1 Tbsp sugar, 1 Tbsp gochujang, 1 Tbsp soy sauce, and 1/2 Tbsp gochugaru. Stir well to ensure the seasoning dissolves evenly without clumps.
Step 4
As the seasoning mixture boils and the rice cakes start to soften, add the prepared cabbage and green onions. Gently mix everything together, ensuring the vegetables are coated with the sauce. Continue to cook for about 1-2 minutes, allowing the cabbage to wilt slightly and meld with the sauce.
Step 5
When the cabbage becomes translucent and appears slightly cooked, stir in 1/2 Tbsp of corn syrup. Corn syrup adds a glossy finish and a subtle sweetness to the tteokbokki. Let it simmer for a moment until the sauce thickens slightly.
Step 6
Reduce the heat to low or temporarily turn off the stove, and artfully arrange 2 slices of processed cheese on top of the tteokbokki. Both cheddar or regular processed cheese work well here.
Step 7
Finally, generously sprinkle a handful of mozzarella cheese on top for that wonderfully stretchy and gooey texture. Feel free to adjust the amount of cheese to your liking. Cover the pan briefly to allow the cheese to melt beautifully.
Step 8
Once the cheese has melted, creating a glorious fusion with the tteokbokki, sprinkle some sesame seeds over the top for an added nutty aroma. Your delicious cheesy tteokbokki is now ready! Enjoy it while it’s hot.
