Cooking Instructions
Step 1
First, prepare the 3 heads of bok choy. If the roots are tied together, gently loosen them with scissors or a knife. Rinse the bok choy thoroughly under running water and drain.

Fill a pot with plenty of water and add about half a tablespoon of salt. Adding salt helps to maintain the vibrant green color of the leaves.

Once the water is boiling vigorously, add the bok choy. Blanch for 15 seconds, then flip the bok choy and blanch for another 15 seconds. A total of 30 seconds is perfect for keeping it crisp!
