A 10-minute recipe for delicious stir-fried eggplant with a savory soy sauce glaze. This dish boasts a wonderful tender texture and rich flavor, making it a perfect side dish for any meal.
Main Ingredients- 3 eggplants
Seasoning- 2 Tbsp cooking oil
- 4 Tbsp soy sauce
- 2 Tbsp minced garlic
- 2 Tbsp chopped green onion
- 5 Tbsp water
- 2 Tbsp sesame oil

Cooking Instructions
Step 1
First, wash the 3 eggplants thoroughly under running water. Trim off the stems, then cut each eggplant in half lengthwise. Slice them diagonally into bite-sized pieces. A helpful tip for slicing: place the eggplant with the cut side facing up to slice more evenly. Although the sliced eggplant looks voluminous, it will shrink significantly when cooked, yielding enough for about two meals.
Step 2
Heat 2 tablespoons of cooking oil in a wok or large pan over medium heat. Once the pan is warm, add 2 tablespoons of minced garlic and stir-fry for about 1 minute until fragrant. Sautéing the garlic first will greatly enhance the dish’s aroma and flavor.
Step 3
Now it’s time to add the soy sauce. I personally prefer using Sampyo soy sauce as its deep and rich flavor is exceptional. Instead of pouring the 4 tablespoons of soy sauce directly into the center of the pan, pour it along the edges of the wok. This technique allows the soy sauce to caramelize slightly, adding a deeper umami flavor. Stir-fry with the eggplant for about 5 minutes over medium heat.
Step 4
After stir-frying with soy sauce for 5 minutes, add 5 tablespoons of water to the pan. Continue to cook over low heat for about 1 minute, allowing the water to be absorbed by the ingredients. Once done, turn off the heat. Finally, add 2 tablespoons of chopped green onion and 2 tablespoons of sesame oil. Give it a gentle mix, and your delicious stir-fried eggplant is ready! Isn’t that wonderfully simple?

For an extra touch, sprinkle some toasted sesame seeds on top if you have them! Unfortunately, I ran out today. Serving this stir-fried eggplant over freshly cooked hot rice is an absolute delight, creating a delicious one-bowl meal.
