Main Ingredients- Beef brisket or thinly sliced beef for bulgogi, 300g
- Fresh chives, 100g
- 1 bag of bean sprouts (approx. 200g)
Seasoning- Soy sauce, 3 tablespoons
- Minced garlic, 1 tablespoon
- Sugar, 1 tablespoon
- Cooking wine (Cheongju), 1 tablespoon
- Sesame oil, 0.5 tablespoon (Optional, for enhanced flavor!)

Cooking Instructions
Step 1
First, prepare your beef brisket or thinly sliced beef for bulgogi. If it’s already sliced, you can use it directly. If you have a larger piece, slice it into bite-sized pieces.
Step 2
In a mixing bowl, combine the beef with 3 tablespoons of soy sauce, 1 tablespoon of sugar, 1 tablespoon of minced garlic, 1 tablespoon of cooking wine (Cheongju), and a pinch of black pepper. Gently mix and marinate for at least 5 minutes to allow the flavors to meld. (For extra flavor, you can add 0.5 tablespoon of sesame oil here.)
Step 3
Rinse the bean sprouts thoroughly under running water 3-4 times. After rinsing, drain them well in a colander to remove excess water. This prevents the dish from becoming watery when cooked.
Step 4
Trim any wilted leaves from the fresh chives, wash them, and cut them into approximately 3-4 cm lengths. (If you are using baby bok choy instead of chives, cut it into similar lengths.)
Step 5
Heat a wok or large skillet over medium-high heat. Add the marinated beef brisket and stir-fry quickly, breaking it apart with chopsticks or a spatula to prevent sticking. Beef brisket cooks very fast, so keep an eye on it to prevent burning.
Step 6
When the beef is about 70-80% cooked, add the prepared bean sprouts to the pan. Toss everything together and stir-fry for about 1 minute, mixing well with the beef. Cook just until the bean sprouts begin to soften slightly while retaining their crispness.
Step 7
Since the bean sprouts weren’t seasoned separately, season the entire stir-fry with salt and black pepper to your taste at this stage. Finally, add the chopped chives and stir-fry over high heat for just 30 seconds to 1 minute. Chives cook very quickly and can become soggy if overcooked, so high heat and a short cooking time are key. Stir-fry until everything is glossy and then turn off the heat.
Step 8
Serve the delicious Beef Brisket and Bean Sprout Stir-Fry immediately with warm rice. It’s a simple yet impressive meal!
