Take out the leftover ‘Yeopddukbokki’ from the refrigerator. If the tteok (rice cakes) or fish cakes are large, use scissors to cut them into bite-sized pieces. This ensures they mix well with the rice and cook evenly when stir-fried.

Prepare the seasoned seaweed (gim). You can either crumble it directly from the packet or cut it into small pieces with scissors. This will be sprinkled on top for added flavor. If you don’t have seasoned seaweed, you can skip this step, but it adds a nice nutty taste.

Lightly coat a pan with cooking oil, add the thinly sliced scallions, and stir-fry over medium-low heat until fragrant to create scallion-infused oil.
