To celebrate the New Year, I’ve prepared Tteokguk! I used store-bought Seolleongtang broth for a simple yet incredibly delicious result. This recipe is perfect for a quick and satisfying New Year’s meal.

Main Ingredients

  • 400g Tteokguk Tteok (rice cakes for soup) – Rinse in cold water and drain.
  • 600g Store-bought Seolleongtang Broth (2 packs) – Adds a deep and rich beef bone broth flavor.
  • 1 paper cup (approx. 200ml) Water – To adjust broth consistency and help the rice cakes cook.
  • 2 Eggs – For richness and a beautiful garnish.
  • 1 stalk Scallion (approx. 15cm) – For fresh aroma and color.

Seasoning

  • 1 tsp Salt – Adjust to taste for perfect seasoning.
  • Pinch of Black Pepper – To enhance the overall flavor.

Cooking Instructions

Step 1

First, prepare your ingredients. Gently rinse the Tteokguk tteok (rice cakes) under cold water and drain them well in a colander. This prevents them from sticking together. Next, thinly slice the scallion (about 15cm long). Have your eggs and the Seolleongtang broth ready. Once everything is prepped, you’re all set to make a delicious Tteokguk!

Pour both packs of store-bought Seolleongtang broth (total 600g) into a pot. Add 1 paper cup of water (about 200ml). Bring the broth to a boil over medium-high heat. Once boiling, add the prepared Tteokguk tteok. Let it boil again until the rice cakes are cooked. Taste the broth and season with salt as needed. It’s best to start with less salt and add more gradually, tasting as you go.

Check if the rice cakes are tender. Then, slowly pour the 2 beaten eggs in a circular motion over the simmering soup. Wait about 10 seconds before gently stirring with chopsticks or a spoon to create delicate ribbons of egg. Finally, add the sliced scallions and let it simmer for another moment. For an extra touch, add a pinch of black pepper. Your delicious New Year’s Tteokguk is ready!
