  • Occasion : Quick & Easy
  • Cooking : Boil / Simmer
  • Servings : 1 serving
  • Difficulty : Anyone

Ingredients

  • 1/2 onion
  • Beef or pork (ground or preferred cut), as desired
  • 1/3 cucumber
  • 1 egg

Cooking Instructions

Step 1

First, to achieve the signature texture of Ganjjajang, chop the onion into relatively large pieces. Julienne the cucumber for a fresh topping.

Step 1

Step 2

It’s best to prepare the fried egg before you start cooking. Lightly oil a pan, crack the egg into it, and cook one side until just set. Flip it, then turn off the heat. The residual heat will perfectly cook the other side by the time your dish is ready.

Step 2

Step 3

Bring a generous amount of water to a boil for cooking the ramen noodles. Don’t discard the starchy noodle water; it will be used to adjust the sauce consistency later.

Step 3

Step 4

In a deep pan or wok, add a good amount of cooking oil and stir-fry the chopped onions over medium-low heat. Cook until the onions become translucent and release their sweet aroma.

Step 4

Step 5

Once the onions are somewhat softened, add your prepared beef or pork and stir-fry together. Break up any clumps of meat and cook until it’s well combined with the onions, developing a rich flavor.

Step 5

Step 6

The key here is to cook the ramen noodles until they are ‘al dente’ – about 80% cooked. They will be further cooked with the sauce, so avoid overcooking them. Chewy noodles will absorb the sauce better!

Step 6

Step 7

Add both the jjajang powder and flake soup mix to the pan with the cooked meat and onions. Stir-fry over low heat for about 1 minute, being careful not to burn, to enhance the aroma of the jjajang.

Step 7

Step 8

Pour in about 1 to 1.5 ladles of the starchy noodle water and mix well. Simmer over medium heat until the sauce thickens slightly to create a delicious Ganjjajang sauce. The noodle water adds depth of flavor and a glossy finish.

Step 8

Step 9

Add the pre-cooked chewy noodles to the finished jjajang sauce. Toss quickly with a spatula or chopsticks, ensuring the sauce coats the noodles evenly. Allow the noodles to soak up the sauce.

Step 9

Step 10

Finally, top with the prepared fried egg and the fresh julienned cucumber. Your delicious Jjajangmyeon ramen, Chef Lee Yeonbok style, is now complete!
