Ingredients- 1L water
- 150-200g young Napa cabbage (Albaegi cabbage)
- 1/3 large Korean leek
- 2 Tbsp Doenjang (Korean soybean paste, measured with a tablespoon)
- 1/2 Tbsp Gochugaru (Korean chili flakes)
- 1/2 Tbsp Anchovy sauce (or fish sauce)
- 1 coin-shaped soup stock cube
- 1/2 red chili pepper (optional)
- 1/2 green chili pepper (optional)
Cooking Instructions
Step 1
First, pour 1 liter of water into a pot and add 1 coin-shaped soup stock cube. Using a soup stock cube adds a rich and deep flavor to the broth without the need for a lengthy simmering process, making it very convenient.
Step 2
Thoroughly wash the young Napa cabbage under running water, then chop it into bite-sized pieces. Young Napa cabbage is naturally sweet and tender, which contributes to a refreshingly clean taste in the soup.
Step 3
Chop the leek into large pieces, about 2cm in length, roughly the size of two finger segments. Cutting the leek this way allows its fragrant aroma to infuse the broth as it simmers.
Step 4
Add the chopped leek to the water where the soup stock has dissolved and infused. Adding the leek first helps to subtly sweeten the broth and infuse it with a pleasant aroma, enhancing the overall depth of flavor.
Step 5
Now, add 2 tablespoons of Doenjang to the pot and stir until it’s well dissolved, ensuring there are no lumps. Properly dissolving the Doenjang will result in a smooth and pleasant soup.
Step 6
Once the water is at a rolling boil, add the chopped young Napa cabbage leaves. To maintain a pleasant texture, avoid overcooking the cabbage; it should be cooked just until tender.
Step 7
Next, add 1/2 tablespoon of anchovy sauce for umami and 1/2 tablespoon of Gochugaru for a mild spicy kick. These seasonings will help balance the flavors of the soup.
Step 8
Thinly slice the chili peppers for a touch of heat and vibrant color. Feel free to add more if you enjoy a spicier soup, or omit them if you prefer a milder taste, especially if children will be eating it.
Step 9
Finally, add the sliced chili peppers and let the soup simmer briefly. Once you can smell the spicy aroma from the chilies infusing the broth, turn off the heat immediately. Your delicious 10-minute Napa cabbage Doenjang Guk is ready to enjoy!
