We welcome spring to our dining table with spring vegetables like dill and shepherd’s purse. Today, I’m sharing an incredibly easy dill sauce recipe. When you spread this flavorful sauce generously on crispy roasted gim (seaweed), the scent of spring will fill your mouth, bringing pure joy. Main Ingredients- 1 bunch of spring dill (cleaned and trimmed)
- 1 red chili pepper
Seasoning Sauce Ingredients- 2 Tbsp anchovy sauce (fish sauce)
- 1 tsp sugar
- 6 Tbsp soy sauce (regular)
- 2 Tbsp plum extract (or syrup)
- 1 Tbsp red pepper flakes (gochugaru)
- 2 Tbsp toasted sesame seeds
- 2 Tbsp sesame oil
- 2 Tbsp anchovy sauce (fish sauce)
- 1 tsp sugar
- 6 Tbsp soy sauce (regular)
- 2 Tbsp plum extract (or syrup)
- 1 Tbsp red pepper flakes (gochugaru)
- 2 Tbsp toasted sesame seeds
- 2 Tbsp sesame oil
Cooking Instructions
Step 1
First, let’s prepare the seasoning sauce. In a small bowl, combine 2 tablespoons of anchovy sauce and 1 teaspoon of sugar. Stir them together thoroughly until the sugar is completely dissolved. This step is crucial for developing the savory depth of the sauce.

Wash the main ingredients, the dill and the red chili pepper, thoroughly under running water. Make sure to rinse the dill well, especially around the root, to remove any dirt.

Finely mince the red chili pepper after removing the seeds. For the dill, chop the root end a bit more finely so it absorbs the sauce well, and roughly chop the leafy parts. This creates a pleasant texture contrast.
