Quick and Refreshing Pollack Roe Stew (Myeongnan-jeot Jjigae)
Super Easy Stew Recipe: Pollack Roe Stew / Pollack Roe Soup
I usually only eat white pollack roe, so I made a super simple pollack roe soup with low-sodium pollack roe. This is a pollack roe stew.
Main Ingredients- 2-3 pieces of white pollack roe
- 1/2 block of firm tofu
- 1/2 onion
- 1/2 zucchini
- A little bit of green onion
Seasoning & Others- 1/2 green chili pepper (optional)
- 1/2 Tbsp minced garlic
- 1 Tbsp mirin (or 1 Tbsp soju)
- A pinch of black pepper (optional)
- 500ml water (or anchovy broth)
- 1 tsp anchovy sauce (optional, for seasoning adjustment)
- 1/2 green chili pepper (optional)
- 1/2 Tbsp minced garlic
- 1 Tbsp mirin (or 1 Tbsp soju)
- A pinch of black pepper (optional)
- 500ml water (or anchovy broth)
- 1 tsp anchovy sauce (optional, for seasoning adjustment)
Cooking Instructions
Step 1
First, prepare the vegetables and tofu for the stew. Dice the tofu into about 1.5cm cubes. Slice the onion and zucchini into similar-sized pieces. Finely chop the green onion. If using green chili peppers, remove the seeds and chop them finely.
Step 2
If you prefer a clear and refreshing soup, using white pollack roe is recommended. Prepare 2-3 pieces of white pollack roe and cut them into bite-sized pieces (about 2-3 cm). Handle them carefully to prevent the roe from breaking apart.
Step 3
Pour 500ml of water (or anchovy broth) into a pot. Add the sliced onion, zucchini, minced garlic, and green onion (mostly the white parts). Bring to a boil over high heat. Once boiling, reduce the heat to medium and cook until the vegetables are tender.
Step 4
When the onion starts to turn translucent, carefully add the cut pollack roe and let it simmer together. Since pollack roe itself is salty, you usually don’t need to add extra salt. At this stage, add 1 tablespoon of mirin or 1 tablespoon of soju to remove any fishy smell and enhance the flavor. You can also add a pinch of black pepper according to your preference.
Step 5
For a spicier and more refreshing taste, add the chopped green chili peppers. While the pollack roe’s saltiness is often sufficient, if you find it too bland, add 1 teaspoon of anchovy sauce to adjust the seasoning. When using anchovy sauce, it’s best to omit additional salt.
Step 6
Finally, add the diced tofu and simmer for another moment. Gently stir to prevent the tofu from breaking apart. Simmer for about 2-3 more minutes until the delicious pollack roe stew is ready. Enjoy it with a warm bowl of rice!
