Main Ingredients- Scallions (approx. 2 large handfuls)
- 1 tsp coarse salt (for blanching)
Seasoning- 1/2 Tbsp soy sauce or regular salt (adjust to taste)
- 1 Tbsp minced garlic (or 1 Tbsp garlic powder)
- 1/2 Tbsp onion powder (optional)
- 1 Tbsp sesame oil (for a nutty aroma!)
- Sesame seeds (for garnish)
- 1/2 Tbsp soy sauce or regular salt (adjust to taste)
- 1 Tbsp minced garlic (or 1 Tbsp garlic powder)

Cooking Instructions
Step 1
Prepare about two large handfuls of fresh scallions. Trim the root ends slightly and remove any wilted or damaged leaves.

Rinse the scallions thoroughly under running water. Make sure to wash between the leaves to remove any dirt or debris.

Fill a pot with plenty of water and bring it to a rolling boil over high heat. Once the water is boiling,

add 1 teaspoon of coarse salt to the boiling water. Adding salt will help maintain the vibrant green color of the scallions and enhance their crispiness.

Carefully add the prepared scallions to the boiling salted water and

blanch them very briefly for about 30 seconds to 1 minute. Be careful not to overcook them, as they will become mushy. The key is to just wilt them slightly.

Immediately remove the blanched scallions from the hot water and rinse them under cold water to cool them down. Rinsing in cold water helps preserve their crisp texture.

Gently squeeze out the excess water from the scallions using your hands. Avoid squeezing too hard, as this can release a raw smell. Cut the scallions into bite-sized pieces (about 2-3 inches long) and place them in a large bowl.
