Main Ingredients

  • Vienna sausages 1.5 handfuls (approx. 150-200g)
  • 1/2 onion (cut into large pieces)
  • A little carrot (thinly sliced or julienned)
  • 1/3 yellow bell pepper (cut into bite-sized pieces)
  • 1/3 red bell pepper (cut into bite-sized pieces)
  • 1 Cheongyang chili pepper (seeds removed and finely minced, adjust spice level to your liking)
  • 7-8 boiled quail eggs

Seasoning

  • 1 Tbsp Gochujang (Korean chili paste)
  • 1.5 Tbsp Ketchup
  • 1 tsp Sugar
  • 1 Tbsp Oligodang (corn syrup) (adds shine and sweetness)
  • A pinch of Black Pepper (a few cracks)
  • A pinch of Toasted Sesame Seeds (for a nutty finish)

Cooking Instructions

Step 1

First, prepare the onion cut into large pieces and the yellow and red bell peppers cut into bite-sized pieces. Lightly oil a pan and add the vegetables. Stir-fry over medium heat until the onions become translucent and fragrant. Be careful not to overcook, as this can reduce their crispiness.

Have your boiled quail eggs ready. Soaking the peeled quail eggs in cold water for a short while can help remove any stickiness from the surface, keeping them clean.

Make shallow diagonal cuts on the Vienna sausages. This helps the sauce penetrate better and makes them look appealing when cooked. Be careful not to cut too deep.

Stir-fry over medium-low heat to prevent the sauce from burning. If the mixture seems too dry while cooking, add 1-2 tablespoons of water to create a more moist consistency. Stir-fry until the sauce evenly coats the vegetables and sausages. Finally, add the prepared quail eggs and toss quickly. Overcooking the quail eggs can make them dry, so add them at the very end and mix gently. For an extra kick of spice, finely mince 1 Cheongyang chili pepper and add it to the pan at this stage. Finish by sprinkling toasted sesame seeds over the top. Your delicious ‘Soya Bokkeum’ is now complete!
