Crispy on the outside, moist on the inside delicious potato dish, potato pancakes made with an egg pan.
Ingredients
- 5-6 medium potatoes
- 2-3 Tbsp potato starch
- 1 pinch of salt
- 1 red chili pepper
- 1 green chili pepper
- Plenty of cooking oil
Cooking Instructions
Step 1
Peel the potatoes and cut them into large, bite-sized pieces. Next, we’ll finely grate them. Using an immersion blender will result in a smoother texture.
Step 2
Traditionally, you’d let the grated potatoes sit to allow the starch to settle, then discard the clear liquid and use only the settled starch. However, for a simpler approach, we’ll lightly drain the grated potato mixture and proceed directly to making the batter. The potatoes themselves contain plenty of moisture, so there’s no need to add any extra water.
Step 3
To create cute, round shapes, we’ll use an egg pan! Heat a generous amount of oil in the pan over low heat. Then, scoop about a tablespoon of the batter and carefully place it into the pan, forming a round shape.
Step 4
If you’d like to add some color to your potato pancakes, thinly slice red and green chili peppers and place them gently on top of the batter. If you enjoy a bit of spice, feel free to use spicy green chilies. The slight heat from the chilies can cut through the richness of the pancake, making it even more delicious.
Step 5
Cook over low heat for about 1-2 minutes per side. Adjust the heat carefully to prevent burning. Flip and cook the other side until golden brown. Your delicious potato pancakes are now ready!
Step 6
Arrange the beautifully cooked potato pancakes on a serving plate. They taste even better when served with a side of soy sauce dipping sauce, if you like!
