Cooking Instructions
Step 1
First, let’s prepare the ‘Beef Bone Broth & Vegetable Porridge Puree’ that adds a deep flavor to the steak. In a pot, combine 1 cup of store-bought beef bone broth and 1.5 cups of store-bought vegetable porridge. Gently stir them together over low heat. (This recipe was inspired by the idea of using leftover vegetable porridge. You can also make the broth using instant beef bone broth powder.)
Step 2
Continue stirring and simmering until the vegetable porridge is well blended with the beef bone broth, creating a smooth puree consistency without lumps. Season with salt and pepper to your taste. Your simple puree is now ready.
Step 3
Next, prepare the vibrant ‘Grilled Vegetable Garnish’ that will enhance the steak’s presentation. Chop the bell pepper, oyster mushrooms, zucchini, carrot, and onion into bite-sized pieces suitable for grilling alongside the steak. Using different colored bell peppers will make the dish visually more appealing.
Step 4
Heat a pan without any oil and add the prepared vegetables and mushrooms. Grill them until they are lightly browned and slightly softened. This step brings out the natural sweetness of the ingredients. Cook over medium heat.
Step 5
Once all the vegetables and mushrooms are nicely grilled, transfer them to a separate dish. It’s now time to season these delicious grilled components.
Step 6
Season the grilled vegetables and mushrooms with 1 tsp salt, 1 tsp black pepper, and 1 tsp herb seasoning. Generously drizzle with 3 Tbsp olive oil and toss gently to coat everything evenly. Your flavorful garnish is complete. Quite simple, isn’t it?
Step 7
The finished beef bone broth and vegetable porridge puree should have a pleasant, thick consistency. If you prefer an even smoother texture, you can blend it further using a blender or immersion blender. However, if you enjoy the texture of the porridge grains, this consistency is perfectly fine and satisfying.
Step 8
Prepare the star of the dish: the Wagyu sirloin steak. Wagyu can sometimes have marbling or connective tissues. Before grilling, use a sharp knife to trim away any excess fat or tough silverskin that might detract from the texture. Pre-trimming ensures a more tender and enjoyable steak experience.
Step 9
Here is the Wagyu sirloin, neatly trimmed of excess fat and connective tissue. With the puree and garnish ready, all that’s left is to perfectly cook the steak.
Step 10
Before grilling, season the steak generously. Sprinkle 1 pinch of salt, 1 pinch of pepper, and 1 pinch of herb seasoning evenly on both sides of the Wagyu sirloin. Then, coat it evenly with 1 Tbsp of olive oil. The oil helps with the Maillard reaction, developing a richer flavor.
Step 11
Set aside the seasoned garnish in a separate dish. We will drizzle balsamic glaze over it later when plating for the final touch.
Step 12
Heat a pan over high heat until it’s very hot. Add a generous amount of olive oil to the hot pan, then carefully place the seasoned Wagyu steak in it. Sear the steak over high heat until a beautiful brown crust forms on each side. Achieving a good sear is crucial for locking in the juices.
Step 13
As the steak cooks, you’ll notice some red juices starting to appear on the surface. It’s important to wait for the right moment before flipping it. Let it cook a bit longer before turning it over.
Step 14
Now, it’s time to flip the steak! Worried that one side might be too dark? This level of browning usually indicates the perfect cooking stage. Add a knob of butter to the pan and let it melt. Baste the steak with the melted butter as it finishes cooking to add extra richness and flavor.
Step 15
Once the steak is cooked to your liking, don’t cut into it immediately. Let it rest for a few minutes. This resting period allows the residual heat to continue cooking the steak gently and redistributes the juices, ensuring a moist and tender result. Steak doneness test tip: Insert a skewer or fork into the steak, remove it, and carefully touch the tip to your lip. If it feels cool, it’s rare; warm means medium; hot indicates medium-well to well-done.
Step 16
Let’s start plating this beautiful creation. Lightly spread some balsamic glaze onto the serving plate. Presentation is key for steak! Alternatively, for a homemade sauce, reduce 1/4 cup of red wine with 1 piece of butter over low heat until syrupy.
Step 17
On one side of the plate, artfully spread a generous portion of the prepared beef bone broth and vegetable porridge puree. The puree will add a layer of creaminess to the steak.
Step 18
Place the perfectly cooked Wagyu sirloin steak elegantly on top of the puree. Enjoying the steak with the puree offers a unique and satisfying experience – it’s filling and provides a delightful contrast, almost like having it with a comforting crust.
Step 19
Finally, arrange the beautifully grilled vegetables and mushrooms around the steak as garnish. Add a final drizzle of balsamic glaze over the steak for an extra touch of sweetness and shine. Your luxurious Wagyu steak is now complete! Enjoy your delicious meal!
