Before we start, why is Prebiotic Tomato Milk Juice so good for you? Fresh red tomatoes are rich in lycopene, which is great for our bodies, and prebiotics serve as food for beneficial gut bacteria. First, peeling the tomato will give you a smoother texture. To easily peel it, make a shallow cross-shaped incision on the top of the tomato. You can blanch it in boiling water to peel, but I’ll be using a direct flame method for peeling. This method is simpler and adds a lovely roasted flavor.

Insert a fork into the tomato and hold it steady. Rotate the tomato over an open flame, gently charring the skin. This will cause the skin to naturally shrink and become easy to peel off. It’s much simpler than blanching in water, and you’ll notice the tomato’s flavor subtly enhance. (Note: While charring meat can produce carcinogens, lightly roasting vegetables is safe and healthy, so feel free to proceed.)

Once removed from the heat, briefly cool the tomato in cold water. Then, gently peel the skin starting from the incision you made – it should come off very easily. The tomato isn’t cooked through, but without the skin, its texture becomes significantly smoother. This step is crucial for a pleasant drinking experience and enhancing the overall flavor of your tomato milk juice.

Cut the peeled tomato into manageable pieces (about 2-3 cm cubes) so it’s easy for the blender to process. You don’t need to cut them too small; just ensure they’re ready for smooth blending.
