Main Ingredients- Pork 1근 (approx. 600g)
- 1 Onion (medium size)
- 1 Green Onion
- 1 handful Cabbage (approx. 150g)
Seasoning- Doubanjiang (adjust to taste)

Cooking Instructions
Step 1
First, prepare the vegetables for the dish. Chop the cabbage into large pieces, about 1-2 cm in size. Also, cut the green onion into similarly large pieces. Cutting them large like this helps maintain a good texture and appearance after stir-frying.

Prepare the pork according to your preference. I used pork neck, which is tender, but pork belly, front leg, or hind leg will also be delicious. Slice the onion thickly into strips.

Heat a pan and stir-fry the pork until it’s nicely browned. Once the pork is somewhat cooked, add the large-cut green onion and 1 tablespoon of minced garlic, and stir-fry together to release their fragrance. The aroma of garlic mingling with the pork makes it even more delicious.

Add the large-cut cabbage to the pan. Cabbage shrinks considerably when cooked, so it’s good to add a generous amount initially. Stir-fry the pork, green onion, and cabbage together.

Now it’s time for the key ingredient: Doubanjiang! Doubanjiang is quite salty, so it’s important to control the amount. For my recipe with 1근 (approx. 600g) of pork, I used 1.5 tablespoons of Doubanjiang. If you prefer less salt, start with 1 tablespoon and taste as you add more. Doubanjiang not only adds saltiness but also a deep umami flavor and aroma.

Add the sliced onions and stir-fry thoroughly until all ingredients and seasoning are evenly combined. Cook until the onions become translucent and their sweetness is released, blending well with the Doubanjiang sauce.
