Tteokbokki Sauce Ingredients (if making from scratch)- Gochujang (Korean chili paste), 1 Tbsp

- Gochugaru (Korean chili powder), 1 Tbsp
- Sugar, 1 Tbsp
- Water, 1/4 paper cup (approx. 50ml)
- Gochujang (Korean chili paste), 1 Tbsp
- Soy sauce, 1 Tbsp
- Gochugaru (Korean chili powder), 1 Tbsp
- Sugar, 1 Tbsp
- Water, 1/4 paper cup (approx. 50ml)
Cooking Instructions
Step 1
First, clean the button mushrooms, remove the stems, and slice them thinly into strips. This preparation ensures a pleasant texture and helps them meld well with the sauce.
Step 2
If you are making the tteokbokki sauce from scratch, combine the gochujang, soy sauce, gochugaru, sugar, and water in a bowl. Mix thoroughly until smooth and lump-free. You can skip this step if you are using store-bought tteokbokki sauce.
Step 3
Bring a large pot of water to a boil and add a pinch of salt. Once boiling, add the spaghetti pasta and cook for 7-8 minutes, or about 1-2 minutes less than the package instructions, until al dente. Reserve about one cup of the pasta water before draining. Drain the pasta thoroughly.
Step 4
Heat 3 tablespoons of olive oil in a pan over medium-low heat. Add the minced garlic and thinly sliced green onion, and sauté gently. Cook until the green onion becomes translucent and the garlic is fragrant, infusing the oil with flavor. This step is crucial for a richer pasta taste.
Step 5
Once the garlic-infused oil is ready, add the sliced mushrooms and pork. Increase the heat to medium and stir-fry. Break up any clumps of pork and cook until it’s browned on the outside and cooked through. The rendered pork juices will add depth to the sauce.
Step 6
After the pork and mushrooms are well-cooked, pour in 1 paper cup of heavy cream and 1 paper cup of milk. Stir well and simmer over medium-low heat until the cream sauce thickens slightly. Then, add 3 tablespoons of the prepared tteokbokki sauce and mix thoroughly. The sweet and spicy notes of the tteokbokki sauce will create a unique flavor profile with the cream. Taste and adjust seasoning with salt and pepper if needed.
Step 7
Once the sauce has reached your desired consistency, add the cooked spaghetti pasta to the pan. Toss everything together to coat the pasta evenly with the sauce. Continue to cook for another 1-2 minutes, allowing the pasta to absorb the flavors. If the sauce becomes too thick, gradually add some of the reserved pasta water to thin it out.
Step 8
Transfer the finished pork pasta to a serving plate. Garnish with a fresh egg yolk in the center, a generous sprinkle of Grana Padano cheese (or Parmesan cheese), and a pinch of parsley flakes and pepper. This completes the special ‘GangDaePa’ style pasta! Breaking the yolk and mixing it into the pasta will give you an even richer and creamier taste.
