With soaring prices, ‘fridge clearing’ is a must these days! I found a pack of pork neck in the fridge and decided to make this hearty and delicious bean sprout bulgogi. It’s perfect as a side dish that makes you eat more rice or as a great appetizer with drinks.

Main Ingredients

  • Fresh Bean Sprouts, 500g
  • Tender Pork Neck, 500g

Seasoning

  • Soy Sauce, 4 Tbsp
  • Gochujang (Korean Chili Paste), 2 Tbsp
  • Minced Garlic, 1 Tbsp
  • Fine Gochugaru (Korean Chili Flakes), 2 Tbsp
  • Maesil Extract (Plum Syrup), 2 Tbsp

Using a generous amount of bean sprouts is the key to this dish’s flavor! I’m using 500g for a great crunchy texture and rich taste. (Feel free to adjust the amount to your preference.)

Line the bottom of your pressure cooker with a generous layer of bean sprouts. This allows the sprouts to absorb the delicious meat juices and seasonings, making them even tastier.

Slice the 500g of pork neck into bite-sized pieces. In a bowl, combine the pork with 4 Tbsp soy sauce, 2 Tbsp gochujang, 1 Tbsp minced garlic, 2 Tbsp fine gochugaru, and 2 Tbsp maesil extract. Mix well to marinate. Let it sit for about 10 minutes to allow the flavors to penetrate the meat.

Arrange the marinated pork nicely over the layer of bean sprouts. For added aroma, you can sprinkle plenty of chopped green onions on top. Close the lid of the pressure cooker and bring it to a boil over high heat. Once the whistle blows, reduce the heat to medium-low and cook for an additional 8 minutes. No extra water is needed, as the meat and bean sprouts will release enough moisture for cooking.

Once the cooking time is complete, carefully release all the steam from the pressure cooker. Open the lid to reveal your delicious Pork Neck and Bean Sprout Bulgogi!
