Let’s learn how to make a delicious kimchi stew using kimchi that doesn’t taste great! Not all homemade kimchi is equally delicious. This batch of kimchi I received from a neighbor is a bit too salty and has a slightly bitter taste. We’re going to transform it into a flavorful kimchi stew.

Main Ingredients

  • Pork shoulder or front leg cut, 400g
  • Kimchi, 1 portion (approx. 1/4 head)
  • Anchovy broth, 0.8-1L
  • Tofu, 1 block
  • Green onion, 1 stalk

Cooking Instructions

First, cut the pork shoulder/front leg (400g) into bite-sized pieces. Place the pork in a bowl, add 1 Tbsp of cooking wine and a pinch of black pepper, and mix well by gently massaging. The cooking wine helps to remove any porky odor and tenderizes the meat.

Chop the kimchi (1 portion) into large, rough pieces. If your kimchi is particularly salty, you can gently shake out some of the excess brine or add a little extra sugar during the cooking process.

Heat a deep pot or wok over medium heat. Add 3 Tbsp of perilla oil and 3 Tbsp of cooking oil. Once hot, add the chopped pork and kimchi. Sprinkle 1 Tbsp of sugar evenly over the mixture. Now, stir-fry for at least 10 minutes. Stir-frying for a longer period allows the kimchi to absorb the oil and flavors, resulting in a richer and more delicious stew. Continue to stir-fry over medium-low heat, ensuring it doesn’t burn.

When the kimchi becomes translucent and has absorbed the oil, releasing a wonderful aroma, pour in 800ml to 1L of pre-made anchovy broth. Adjust the amount of broth based on the saltiness of your kimchi and your desired stew consistency. Add 1 Tbsp of minced garlic to the pot. Bring the stew to a boil over high heat, then reduce to medium heat and simmer for about 10 minutes, allowing the kimchi and pork to fully absorb the flavors of the broth.

Once the kimchi stew has simmered sufficiently and developed a rich, spicy flavor, add 1 block of tofu, cut into generous pieces. Finally, top with 1 stalk of chopped green onion.
