This time, I tried making it without soy sauce, but it turned out a bit bland, so I eventually added some. My goal was to create a delicious pork bulgogi without soy sauce, but even with the adjustment, the taste is incredibly satisfying! What makes it even better is serving it with a generous amount of fresh scallions. The combination is fantastic! Main Ingredients

  • 1 kg Pork shoulder (front leg cut)
  • 1 Onion
  • 15 cloves Garlic
  • Soju (for removing pork odor)

Marinade

  • 2 Tbsp Fish sauce
  • 3 Tbsp Oyster sauce
  • 3 Tbsp Soy sauce
  • 3 Tbsp Honey
  • Pinch of Black pepper
  • Fresh Scallions (thinly sliced)
  • 2 Tbsp Mirin (or cooking wine)
  • Sesame seeds (toasted)

Cooking Instructions

Step 1

Begin by removing excess blood from the pork. Place the pork in a bowl and soak it in water mixed with a little soju for about 10 minutes. This helps to eliminate any gamey odor. After soaking, rinse the pork under cold water and pat it dry thoroughly.

Step 2

Slice the onion thinly and mince or crush the garlic cloves. Having your vegetables prepped makes the cooking process much smoother.

Step 3

In a small bowl, combine all the marinade ingredients: fish sauce, oyster sauce, soy sauce, honey, black pepper, and mirin. Whisk everything together until well combined. You can substitute honey with corn syrup if you prefer, or add a touch of gochujang (red chili paste) or chili powder for a spicier kick.

Step 4

Add the pork, sliced onion, minced garlic, and the prepared marinade to a mixing bowl. Gently knead the ingredients together with your hands, ensuring the pork is evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld and the meat to tenderize. For best results, marinate for an hour or longer.

Step 5

Heat a wok or large skillet over medium-high heat. Add the marinated pork, onion, and garlic. Stir-fry briskly, tossing frequently to prevent burning, until the pork is cooked through and lightly browned, and the onions are translucent.

Step 6

Once the pork is fully cooked, transfer it to a serving platter or a sizzling plate. Generously sprinkle the top with freshly sliced scallions and toasted sesame seeds. The abundant scallions cut through the richness and add a wonderful freshness.
