Main Ingredients- Pork belly 200g (recommended cut)
- 10 cloves garlic
- 1 onion
- 1 potato
- 1 fried egg (for topping)
Seasoning & Sauce- 1 Tbsp oyster sauce
- 1 Tbsp soy sauce
- 1 Tbsp plum extract
- 1 Tbsp honey
- 3 Tbsp water
- 1 Tbsp oyster sauce

Cooking Instructions
Step 1
First, prepare the ingredients for your fried rice. Cut 200g of pork belly into cubes. Mince or thinly slice 10 cloves of garlic. Dice 1 onion and cut 1 potato into 1cm cubes after peeling. Prepare one fried egg for topping. You’ll make two sauces: Sauce 1 is 1 Tbsp oyster sauce mixed with 1 Tbsp soy sauce. Sauce 2 is 1 Tbsp plum extract, 1 Tbsp honey, and 3 Tbsp water, mixed together.
Step 2
Heat 2 Tbsp of olive oil in a deep pan or wok over medium heat. Once the oil is warm, add the cubed pork belly and cook until nicely browned. Once the pork fat starts to render, add the diced potatoes and sliced garlic. Sauté until the potatoes are slightly tender, allowing the garlic’s aroma to infuse the oil.
Step 3
When the pork and potatoes are partially cooked, pour in Sauce 2 (1 Tbsp plum extract + 1 Tbsp honey + 3 Tbsp water). This sauce will add a beautiful sheen, a subtle sweetness, and helps to eliminate any gamey smell from the pork. Stir and cook until the sauce thickens slightly over medium-low heat.
Step 4
Once the sauce has reduced, lower the heat, cover the pan, and let it cook for another 2-3 minutes. Check the potatoes with a fork; they should be tender when pierced. This step allows the ingredients to meld their flavors beautifully.
Step 5
Now for the final seasoning. Add Sauce 1 (1 Tbsp oyster sauce + 1 Tbsp soy sauce) to the pan. Stir everything together well to ensure the seasoning is evenly distributed and to adjust the taste. The combination of oyster sauce and soy sauce will provide a rich umami flavor. Stir-fry quickly to coat all the ingredients.
Step 6
Prepare your rice. Add a bowl of warm cooked rice to the pan. Press down firmly with your spatula as you stir-fry. It’s important to keep the heat on low to gently cook the rice and allow the flavors to fully penetrate each grain. Continue to stir-fry until the rice is fluffy and well-combined with the sauce. Once done, turn off the heat and serve in a bowl.
Step 7
