Main Ingredients- 1 slab Pork Belly (approx. 200-300g)
- 6 leaves Well-fermented Kimchi
- 1 handful Dried Pollack or Anchovies (for broth)
- 1 stalk Green Onion

Step 1
Let’s start with the secret to a delicious stew: the broth! Rinse the rice twice, then pour in the third rinse water into a pot. Add a piece of kombu (dried kelp) and let it steep for about 15 minutes to create a simple dashi. (If you don’t have kombu, plain water or store-bought broth can be used.)

Now, let’s make a more robust broth. Place the dried pollack or cleaned anchovies in a pot and lightly toast them over low heat to remove any fishy smell. (This step can be skipped if you prefer.)

Cut the kimchi into bite-sized pieces. Layer the ingredients in the pot: 2 pieces of kimchi, 1 slab of pork belly, another 2 pieces of kimchi, 1 slab of pork belly, and finally, 2 more pieces of kimchi. You can adjust the ratio of kimchi to pork belly according to your preference.

Cut the layered kimchi and pork belly into 4-5 portions and arrange them neatly in the pot.
