  • 13-15 stalks of garlic scapes (choose fresh, straight ones)
  • 200g ground pork
  • 2 bowls of cooked rice (warm)
  • 2 Tbsp cooking oil
  • 0.5 Tbsp oyster sauce
  • Salt (to taste)
  • Black pepper (for finishing)

Pork Marinade (Tablespoon Measurement)

  • 2 Tbsp soy sauce
  • 1 Tbsp cooking wine (mirin)
  • 0.3 Tbsp sugar (approx. 1/3 tsp)
  • Pinch of black pepper

Cooking Instructions

Select fresh garlic scapes that are dark green and grow straight. Trim off the tough ends and finely chop the scapes into small pieces, about 0.5 cm long. Chopping them small will help them integrate well into the fried rice.

In a bowl, combine the 200g of ground pork with the marinade ingredients: 2 Tbsp soy sauce, 1 Tbsp cooking wine, 0.3 Tbsp sugar, and a pinch of black pepper. Mix well to ensure the pork is evenly coated with the marinade. Let it sit for a few minutes to absorb the flavors.

Heat 2 Tbsp of cooking oil in a pan over medium heat. Add the marinated ground pork and break it up with your spatula. Stir-fry until the pork is cooked through and no longer pink, about 3-5 minutes.
