Tired of eating chicken for every diet meal? Try using pork tenderloin or pork neck for a change! By adding plenty of bean sprouts, which are 95% water and contain fat-burning components, you can create an exotic and satisfying stir-fried noodle dish. Forget about the spicy stir-fried noodles; this easy-to-make bean sprout stir-fried noodle will be so delicious that you’ll forget you’re on a diet. It’s also important to include some carbohydrates, so I used leftover buckwheat noodles from making tray buckwheat noodles. Let’s get cooking and boil those noodles!
Main Ingredients- 100g Pork Tenderloin (or Pork Neck)
- 50g Buckwheat Noodles (fresh or dried)
- 1 handful Bean Sprouts (approx. 100g)
- 50g Scallions
- 1 Red Chili Pepper
- 4 cloves Garlic
Sauce & Seasoning- 1 Tbsp Oyster Sauce
- Pinch of Black Pepper
- 1 Tbsp Olive Oil
- 1 Tbsp Oyster Sauce

Cooking Instructions
Step 1
Bring a pot of water to a rolling boil. Add the buckwheat noodles and cook them. If the water starts to boil over, add about half a cup of cold water. Repeating this process once or twice will make the noodles chewier. Make sure to cook with the lid off to prevent the noodles from becoming mushy.
Step 2
Drain the noodles when they are slightly undercooked and rinse them quickly under cold water. Rinsing with cold water helps to firm up the noodles. Place them in a colander to drain the water completely.
Step 3
Wash the bean sprouts under running water and drain them in a colander. Cut the scallions into 5cm lengths. Remove the seeds from the red chili pepper, halve it, and thinly slice it into strips. Slice the garlic thinly.
Step 4
Heat 1 Tbsp of olive oil in a pan over medium heat. Add the sliced garlic and stir-fry until fragrant. Once the garlic aroma is released, add the pork tenderloin and sprinkle with black pepper. Stir-fry until the pork is more than 80% cooked and the surface is opaque.
Step 5
When the pork is about 80% cooked, add the sliced red chili pepper and scallions to the pan and stir-fry them together. Next, add the drained buckwheat noodles and stir-fry, mixing everything well. It’s important to loosen the noodles as you stir-fry so they don’t stick together.
Step 6
Once the pork is fully cooked, add the bean sprouts and 1 Tbsp of oyster sauce. Stir-fry quickly to combine all the ingredients. Be careful not to overcook the bean sprouts, as they will release water and lose their crispiness. Add them at the very end and stir-fry just until they are slightly tender. Your delicious stir-fried noodles are ready!
