Today, we’re going to make a truly delicious pork and aged kimchi stew that’s a perfect match for rice! The harmony of its deep, rich broth, tender meat, and crisp kimchi is exceptional.
Step 2
First, let’s prepare the seasoning paste that will give the kimchi stew its wonderful flavor. Commercial beef bone broth often has some seasoning already, and aged kimchi itself is also seasoned. Therefore, it’s important to add seasonings gradually and adjust to taste. In a bowl, combine 2 Tbsp gochugaru, 1 Tbsp sugar, 3 Tbsp soy sauce, a pinch of black pepper, 1 Tbsp minced garlic, and 2 Tbsp cooking wine. Mix well to create the seasoning paste. If it’s not salty enough later, you can add salt to adjust. Cut the prepared 1/4 head of aged kimchi into bite-sized pieces and place them at the bottom of the pot.

Spread the sliced onion evenly over the kimchi. The sweetness of the onion will further enhance the flavor of the kimchi stew. Next, arrange the sliced pork neck and whole pork belly on top. Using a mix of pork neck and belly is great because the fat rendered from the belly makes the stew even more savory and tender. Choosing cuts with a good balance of fat and lean meat will result in a tastier stew.

Now it’s time to add the broth. Carefully pour the prepared 1 pack (approx. 500ml) of commercial beef bone broth into the pot. The broth should ideally cover most of the ingredients. Bring it to a boil over high heat, then reduce the heat to medium, cover with a lid, and simmer for 15 to 20 minutes. This allows the pork to become tender and the kimchi to soften. It’s a good idea to check occasionally to ensure the kimchi or meat doesn’t burn.
