Sotteok Sotteok consists of rice cakes and sausages threaded alternately onto skewers and coated in a delicious sauce, making it a favorite treat for many. I’ve adapted a recipe from Chef Im Hyo-sook’s ‘The Best Cooking Secrets’ to create this version at home. Get ready for a delightful culinary experience!

Rice Cakes and Sausages

  • 140g Tteokbokki rice cakes (choose ones similar in length to the sausages)
  • 260g Vienna sausages

Sauce Ingredients

  • 1/3 cup water (approx. 60ml)
  • 1/2 Tbsp soy sauce
  • 2 Tbsp strawberry jam
  • 1/2 Tbsp minced garlic
  • 2 Tbsp minced onion
  • 1/2 Tbsp sugar
  • 1/2 Tbsp gochujang (Korean chili paste)
  • 3 Tbsp ketchup
  • 2 Tbsp gochugaru (Korean chili flakes)

Cooking Instructions

Step 1

Select tteokbokki rice cakes that are similar in length to the Vienna sausages and not too thick. If the rice cakes are too large, the sauce might not penetrate well.

Blanch the tteokbokki rice cakes in boiling water for about 1 minute. Be careful not to overcook them, as they can become mushy. Immediately rinse them under cold water to cool them down; this helps prevent the rice cakes from sticking together.

You can peel the Vienna sausages or leave the skin on. Make diagonal scores about 2-3 times on each sausage. These cuts allow the sauce to penetrate better, resulting in a richer flavor, and also make the sausages look more appealing when cooked.

Briefly blanch the scored Vienna sausages in boiling water for 30 seconds to 1 minute. This step helps to remove any unwanted gamey smell from the sausages and makes them delightfully plump and firm.

Thread the prepared tteokbokki rice cakes and Vienna sausages alternately onto skewers. Aim for 2-3 pieces of each per skewer for a balanced and attractive presentation.

In a small bowl, combine water, soy sauce, strawberry jam, minced garlic, minced onion, sugar, gochujang, ketchup, and gochugaru. Whisk everything together until smooth to create a delicious sauce.

Once it starts to bubble, reduce the heat to low and stir continuously with a spatula for about 5 minutes until the sauce thickens to your desired consistency.
