Shrimp Fritter Ingredients- 12 large or medium shrimp (peeled, deveined, heads removed)
- 30g onion (finely minced)
- 15g green onions (chopped)
- 1/2 red chili pepper (seeds removed and finely minced; red bell pepper can be substituted)
- 2 eggs
- 1 pinch of salt
- 1/2 cup pancake mix (or all-purpose flour)
- Cooking oil (generous amount)
Cooking Instructions
Step 1
Rinse the shrimp thoroughly under cold water. Carefully remove the heads and legs. Then, peel off the shell, ensuring a clean preparation.
Step 2
Using a toothpick or skewer, gently make an incision along the back of each shrimp. Carefully extract the dark vein running through the body. Removing the vein ensures a cleaner, less bitter taste.

With a sharp knife, make a shallow cut along the back of each prepared shrimp, lengthwise. Gently press down to flatten the shrimp. This helps them cook evenly and creates a beautiful shape. Pat the flattened shrimp dry with paper towels.

Finely mince the green onions, onion, and red chili pepper. Finely chopped vegetables will incorporate well into the batter, adding texture and flavor.
