Main Ingredients
- 1/4 carrot, finely diced
- 5 cloves garlic, thinly sliced or minced
- 1/2 stalk green onion, finely chopped
- 3 eggs
- 10-12 small cocktail shrimp, peeled and deveined
- 2 bowls cooked rice (preferably warm)
Cooking Instructions
Step 1
First, prepare your vegetables. Wash and peel the 1/4 carrot, then dice it very finely for the fried rice. Thinly slice or mince the 5 cloves of garlic. Wash and finely chop the 1/2 stalk of green onion.
Step 2
Crack 3 eggs into a clean bowl. Whisk the egg yolks and whites together until well combined.
Step 3
Add 1 tablespoon of cooking wine to the beaten eggs. The cooking wine helps to eliminate any eggy smell and adds a smoother texture. Mix gently to avoid creating too many bubbles.
Step 4
Prepare about 10-12 small cocktail shrimp. Rinse them under cold running water 2-3 times. If the shrimp are still frozen, you can soak them in cold water to speed up thawing.
Step 5
Drain the rinsed shrimp well and pat them dry thoroughly with paper towels. If the shrimp are not dried properly, the oil can splatter dangerously when frying.
Step 6
Heat a wok or large skillet over medium-high heat. Add a generous amount of cooking oil, swirling to coat the entire surface. This step is crucial for developing the flavor of the fried rice.
Step 7
Once the pan is hot, pour in the beaten egg mixture. Spread it thinly across the pan.
Step 8
As the edges of the egg begin to set, use chopsticks to gently scramble the egg. Cook until it’s just set but still soft and moist; avoid overcooking.
Step 9
Transfer the cooked scrambled eggs to a separate plate. You can wipe the pan clean or add a little more oil if needed.
Step 10
Add the sliced or minced garlic to the pan. Sauté over low to medium-low heat, stirring constantly, until the garlic is fragrant and lightly golden. This process infuses the oil with garlic flavor.
Step 11
Once the garlic is fragrant and golden, add the diced carrots to the pan. Stir-fry until the carrots are slightly tender.
Step 12
Add the dried cocktail shrimp to the pan along with the 1 tablespoon of cooking wine. Stir-fry until the shrimp turn pink and are cooked through. The cooking wine helps to remove any fishy odor and enhances the shrimp’s flavor.
Step 13
As the shrimp cook, add the chopped green onions. Stir-fry briefly until the green onions are fragrant and slightly wilted, adding another layer of aroma to the dish.
Step 14
When the green onions begin to soften, return the scrambled eggs to the pan. Gently toss everything together to combine, ensuring the ingredients are evenly distributed.
Step 15
Add the 2 bowls of warm cooked rice to the pan. If the rice is clumped, use a spatula to break it up and mix it with the other ingredients.
Step 16
Drizzle 1.5 tablespoons of oyster sauce over the rice and ingredients. Stir-fry well to coat everything evenly, allowing the savory oyster sauce to meld with the rice and vegetables.
Step 17
Season with a pinch of black pepper. Taste and adjust seasoning if necessary by adding a little more salt or oyster sauce. Be careful not to oversalt. Stir-fry once more briefly.
Step 18
Your delicious shrimp fried rice is ready! Transfer it to a serving plate. The aromatic garlic pieces and the satisfyingly plump shrimp make this fried rice incredibly appealing. If you have cocktail shrimp on hand, definitely give this recipe a try! Your family will love it.^^
