Dongjuk clams are also known as ‘water-gun clams’ because they are packed with so much juicy broth inside. When you make clam soup with these delicious clams, you won’t need any extra seasoning! The rich, generous broth will bring out the true, deep flavor of the clams. Dongjuk clams are often more affordable than small-abalones, so be sure to try making this soup when they are in season. You’ll truly appreciate the intense, savory taste of the sea!
Ingredients- 600g Dongjuk clams (purged of sand)
- 600ml water (3 cups)
- 250g Korean radish, 1 sheet (10x10cm) dried kelp (dashima)
- 2 Tbsp Cheongju (Korean rice wine)
- 1 stalk green onion
- 2 Korean green chilies (cheongyang peppers)
- Pinch of black pepper
Cooking Instructions
Step 1
In a pot, combine the 600ml of water, Korean radish cut into large pieces, and the kelp sheet. Bring to a boil over high heat. Once the water starts boiling, remove the kelp, and continue to boil until the radish becomes transparent.
Step 2
When the radish is transparent and the water is at a rolling boil, add the purged Dongjuk clams and 2 tablespoons of Cheongju, which helps remove any fishy smell. Bring back to a boil.
Step 3
As the clams begin to open and cook, carefully skim off any foam that rises to the surface. While this step might seem tedious, it’s crucial for achieving a clear and clean-tasting broth. The more diligently you skim, the deeper and more refreshing the flavor will be.
Step 4
Once all the clams have opened and are cooked, add the chopped green onion and sliced Korean green chilies. Finish by freshly grinding a pinch of black pepper for aroma, then immediately turn off the heat. Be careful not to overcook, as the clams can become tough.
Step 5
Serve the finished Dongjuk clam soup in bowls.
