Cooking Instructions
Step 1
First, let’s prepare the beef for our flavorful fried rice. Cut the beef sirloin (intended for bulgogi) into bite-sized pieces, about 2-3 cm.
Step 2
In a large bowl, place the cut beef. Add the bulgogi sauce, sugar (or mirin), minced garlic, salt, pepper, and ginger powder. Using a spatula or spoon, gently mix the marinade into the beef, ensuring it’s evenly coated. Let it marinate for about 10 minutes for best results.
Step 3
Now, let’s prepare the vegetables that will add color and texture to our fried rice. Dice the carrot, onion, and shiitake mushrooms into small, approximately 0.5 cm cubes. For the pineapple, remove the tough skin and core, then cut it into 1.5 cm thick, bite-sized strips.
Step 4
It’s time to start cooking the fried rice! Heat a wok or large skillet over high heat. Add the marinated beef and stir-fry without adding any oil. Once the beef is partially cooked, add the diced carrots and continue to stir-fry. Cook until the carrots are slightly tender and translucent.
Step 5
When the carrots are slightly softened, add the diced shiitake mushrooms and onions. Stir-fry everything together until the vegetables are tender. Cooking over high heat ensures the vegetables retain a pleasant crunch.
Step 6
Push the cooked ingredients to one side of the pan. Add the cooked rice (with peas) to the empty space and stir-fry it for a moment until it’s heated through.
Step 7
Now, add the prepared pineapple pieces to the pan. Stir-fry everything together, mixing the rice, beef, vegetables, and pineapple until well combined. You’ll start to smell the sweet aroma of the pineapple.
Step 8
Once the rice and all other ingredients are well mixed, add the peanut butter. Stir it in until it melts and blends, adding a wonderful nutty depth to the flavor.
Step 9
Finally, add the fish sauce, soy sauce, and sesame oil. Stir everything together to ensure the flavors are evenly distributed. Give it a final quick stir-fry.
Step 10
Your delicious pineapple fried rice is ready! Since the pan was quite full, we’ll make the scrambled eggs in a separate pan.
Step 11
To make the scrambled eggs, heat some oil in another non-stick pan over medium heat. Crack two eggs into the pan and sprinkle with a pinch of salt. As the eggs begin to set, gently break the yolks with a spatula and mix them in. Push the cooked eggs to one side, and crack the remaining egg into the empty space. Stir with chopsticks as the egg cooks, creating soft curds. Turn off the heat just before they are fully cooked; the residual heat will finish cooking them to a perfect, tender consistency.
Step 12
Serve the pineapple fried rice onto plates and top with the beautifully prepared scrambled eggs. Enjoy your wonderful meal!
