I tried mixing cucumber with pineapple, and it’s incredibly delicious! This refreshing side dish can be made in just 10 minutes without the need to salt the cucumbers beforehand. Perfect for a quick and flavorful addition to your meal.
Main Ingredients- 1 cucumber
- 120g pineapple (canned or fresh)
Dressing Ingredients- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp soy sauce
- 1 Tbsp anchovy sauce (or fish sauce)
- 2 Tbsp plum extract (maesilcheong)
- 1 Tbsp vinegar
- A pinch of sesame seeds
- A drizzle of sesame oil
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp soy sauce
- 1 Tbsp anchovy sauce (or fish sauce)
- 2 Tbsp plum extract (maesilcheong)
- 1 Tbsp vinegar
- A pinch of sesame seeds
- A drizzle of sesame oil
Cooking Instructions
Step 1
First, let’s prepare all the ingredients for today’s dish. You’ll need a fresh cucumber, sweet pineapple, and the components for our tasty dressing.

Wash the cucumber thoroughly. Remove the seedy core, then slice it diagonally into pieces about 0.5 cm thick. Try to keep the thickness consistent, as slicing too thinly might affect the texture.

Cut the pineapple into bite-sized pieces, similar in size to the cucumber slices. If you’re using canned pineapple, drain any excess liquid before adding it.

Place the sliced cucumber and pineapple into a large mixing bowl. Look how vibrant the colors are already!

Now it’s time to add the delicious seasoning! Add the gochugaru, soy sauce, anchovy sauce, plum extract, vinegar, and sesame seeds to the bowl with the vegetables.
