Among its six varieties, the purple Songyi is said to possess the most significant therapeutic effects. While edible raw, Songyi can also be incorporated into juices, kimchi, salads, and more. Ingredients- 1 fresh Songyi (Houseleek) head (approx. 100g)
- 2 bottles of plain yogurt (100ml each)
Cooking Instructions
Step 1
Start with a fresh head of purple Songyi. It’s not only beautiful but also incredibly nutritious and delicious.
Step 2
When eaten raw, Songyi has a crisp, crunchy texture and is surprisingly not bitter at all. Even children will enjoy its unique taste!
Step 3
Thorough cleaning is key! Fill a bowl with water and add 2 tablespoons of vinegar. Soak the Songyi for about 5 minutes. This helps loosen any dirt or debris attached to the leaves.
Step 4
Rinse the Songyi under running water, gently rubbing to remove any remaining soil. Ensure all parts are thoroughly cleaned, especially in between the leaves.
Step 5
Pat the Songyi dry after washing. Then, chop it into manageable pieces, about 2-3 cm in size, for easier blending. A good ratio to aim for is 1:1 of Songyi to yogurt for a balanced flavor.
Step 6
Prepare two bottles of plain yogurt (total 200ml). The natural sweetness of the yogurt means you likely won’t need any added honey or syrup. Pour the yogurt into the blender first; this helps the blades catch the ingredients better and ensures a smoother blend. Add the chopped Songyi on top.
Step 7
Blend everything until smooth and creamy. Continue blending until there are no visible chunks and the texture is uniform. Your vibrant and healthy Songyi juice is ready to be enjoyed immediately. Serve chilled!
