  • 5 cloves garlic, minced (or 1.5 Tbsp)

Seasoning Ingredients

  • 3 Tbsp cooking wine (mirin or cheongju)
  • 1 Tbsp sesame oil
  • 1 Tbsp perilla seed oil (optional)

Cooking Instructions

Step 1

First, prepare all your ingredients. Rinse the 500g of fresh duck meat and pat it dry. Mince the 5 cloves of garlic finely. Measure out 5 Tbsp of perilla seed powder, 3 Tbsp of cooking wine, 1 Tbsp of sesame oil, and 1 Tbsp of perilla seed oil for added nuttiness. (This recipe serves 2 people).

Place the prepared duck meat in a large bowl. Add the 3 Tbsp of cooking wine; this helps to tenderize the meat and remove any gamey odors. Add the minced garlic as well. Use your hands to gently knead and marinate the duck, ensuring the seasoning coats the meat evenly.

Now, add the star ingredient for nutty flavor: 5 Tbsp of perilla seed powder. Mix thoroughly with your hands again. It’s important to really work the perilla seed powder into the duck meat so that the flavor infuses beautifully during cooking.

Finally, drizzle in 1 Tbsp of sesame oil. If you have perilla seed oil, you can use a combination of 1 Tbsp sesame oil and 1 Tbsp perilla seed oil for an even richer aroma. (If you don’t have perilla seed oil, using just sesame oil is perfectly fine.) Gently mix everything one last time to complete the marinade.

Heat a frying pan over medium heat. Add the marinated duck stir-fry to the pan. You don’t need to add any extra oil, as the duck meat will release its own delicious fat as it cooks. Stir-fry the duck over medium heat, allowing it to cook through.
