Main Ingredients- 2kg LA Galbi (short ribs)
Special LA Galbi Marinade- 1.5 cups Soy Sauce (approx. 300ml)
- 1/3 cup Sugar (approx. 70g)
- 2/3 cup Mirin (or Rice Wine) (approx. 130ml)
- 1/3 cup Plum Extract (Maesil Extract) (approx. 70ml)
- 80ml Pear Juice
- 1/3 cup Cooking Wine (Soju or Cheongju) (approx. 70ml)
- 1/4 cup Minced Garlic (approx. 60g)
- 1/3 tsp Ginger Powder
- 2/3 cup Chopped Green Onion (approx. 80g)
- 2 Tbsp Sesame Oil
- Pinch of Black Pepper

First, it’s crucial to properly remove the blood from the LA Galbi. Soak the ribs in cold water for about 2 hours, changing the water once or twice if possible. Gently rinse the bone areas under running water while soaking to ensure all blood is removed, resulting in a cleaner taste.

Now, let’s prepare the special marinade that will give the LA Galbi its incredible flavor. Referencing a popular Korean recipe (like Baek Jong Won’s), for 2kg of LA Galbi, combine: 1.5 cups soy sauce, 1/3 cup sugar, 2/3 cup mirin, 1/3 cup plum extract, 80ml pear juice, 1/3 cup cooking wine (soju or cheongju), 1/4 cup minced garlic, 1/3 tsp ginger powder, 2/3 cup chopped green onion, 2 Tbsp sesame oil, and a pinch of black pepper. Whisk all ingredients together until well combined.

Place the drained LA Galbi into the marinade. Layer the ribs, ensuring each piece is coated evenly with the marinade. Cover and refrigerate for at least 3-4 hours, or ideally overnight, to allow the flavors to deepen. Storing them in a kimchi refrigerator or an airtight container helps maintain the ideal temperature for marination.

Add the marinated ribs to the pan, along with any remaining marinade. Pour in 1/3 cup of water. Cook, covered, allowing the ribs to braise and tenderize in the sauce.
