Main Ingredients- 300g fresh soybean sprouts
- 2 cups short-grain rice
- 1.5 cups water
Spicy & Sweet Soy Sauce Seasoning- A small bunch of fresh chives (finely chopped)
- 1 Korean chili pepper (seeds removed and finely chopped)
- 5 Tbsp soy sauce
- 2 Tbsp oligodang (corn syrup) or rice syrup
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp fresh sesame oil
- 1 Tbsp crushed toasted sesame seeds
- A small bunch of fresh chives (finely chopped)
- 1 Korean chili pepper (seeds removed and finely chopped)
- 5 Tbsp soy sauce
- 2 Tbsp oligodang (corn syrup) or rice syrup
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp fresh sesame oil
- 1 Tbsp crushed toasted sesame seeds
Cooking Instructions
Step 1
First, rinse the short-grain rice thoroughly under running water until clean. Drain the washed rice in a sieve and let it soak in water for about 30 minutes. Soaking the rice beforehand will result in fluffier and tastier cooked rice.
Step 2
While the rice is soaking, prepare to clean the soybean sprouts and make the delicious seasoning sauce. Place the soybean sprouts in a bowl and rinse them several times under cold running water, shaking gently. Removing any debris or damaged parts will ensure a cleaner taste and a crispier texture. After washing, drain the sprouts well in a sieve.
Step 3
Prepare the fragrant shiitake mushrooms. Trim the tough ends of the fresh shiitake mushrooms, wipe them clean, and then slice them thinly into strips so they mix well with the rice. The chewy texture of shiitake mushrooms will enhance the flavor of the rice.
Step 4
Prepare the vegetables for the seasoning sauce. Wash the fresh chives and spicy Korean chili pepper under running water, pat them dry, and then mince them finely. If you prefer, you can also finely chop green onions, scallions, or red chili peppers for added color and flavor.
Step 5
Let’s make the delicious soy sauce seasoning! In a small bowl, combine the finely chopped chives and Korean chili pepper. Add 5 Tbsp soy sauce, 2 Tbsp oligodang (for sweetness), 2 Tbsp gochugaru (for a touch of heat), 2 Tbsp fresh sesame oil (for nutty aroma), and finally 1 Tbsp crushed toasted sesame seeds. Mix everything well with a spatula or spoon until the ingredients are evenly combined to create the seasoning sauce.
Step 6
Now, it’s time to prepare for cooking the rice. Drain the rice that has been soaking for 30 minutes thoroughly in a sieve. Spread the drained rice evenly in the bottom of the pot you will be using to cook the rice. It’s important to spread the rice evenly so it cooks uniformly.
Step 7
Nicely arrange the cleaned soybean sprouts and the sliced shiitake mushrooms over the soaked rice. It’s best to distribute the soybean sprouts evenly on top of the rice. Pour 1.5 cups of water evenly over the ingredients. The rice-to-water ratio might vary slightly depending on the type of rice and how long it was soaked.
Step 8
Now, place the pot over high heat and bring the rice to a boil. As soon as steam starts to rise and the water begins to boil, immediately reduce the heat to medium-low. Cover the pot with a lid and cook for about 12 minutes until the rice is cooked through and fluffy. Boiling initially on high heat brings the water to a boil, and then cooking on medium-low allows the rice to cook gently without burning.
Step 9
After 12 minutes of cooking, turn off the heat completely without lifting the lid. Let the rice steam, covered, for about 10 minutes. This steaming process allows the moisture to distribute evenly throughout the rice grains, making them more tender and chewy.
Step 10
Once the steaming is complete, remove the lid. Using a rice paddle or spatula, gently fluff and mix the rice, starting from the bottom of the pot. Mix the soybean sprouts, shiitake mushrooms, and rice together gently until they are well combined.
