  • 4 medium new potatoes
  • 2 cups water (approx. 400ml)
  • 1 tablespoon sugar
  • Pinch of salt (optional, about 1/2 teaspoon)

Start with fresh new potatoes. If you plan to boil them with the skin on, scrub them thoroughly to remove all dirt. If you prefer to peel them, do so before boiling. Place the prepared potatoes in a pot and add 2 cups of water (about 400ml), ensuring the potatoes are mostly submerged. Adding a small pinch of salt (around 1/2 teaspoon) can help remove any raw smell and enhance the potato’s flavor.

Bring the water to a boil over high heat, then reduce the heat to medium and simmer for about 15-20 minutes. To check for doneness, insert a chopstick or skewer into the center of a potato. It should slide in easily without resistance. Be careful not to overcook, as this can make the potatoes fall apart.

Once the potatoes are cooked, carefully drain all the water from the pot. Sprinkle 1 tablespoon of sugar evenly over the hot potatoes. Turn the heat to very low.
