- 1 Tbsp Oligodang (Korean corn syrup, approx. 15ml, adjust sweetness as desired)
- 0.5 Tbsp Sesame oil (approx. 7.5ml)
- 0.3 Tbsp Toasted sesame seeds (approx. 4.5ml, adjust to taste)

Cooking Instructions
Step 1
First, let’s prepare the delicious soy sauce dressing for your bibim guksu. In a small bowl, combine 1 tablespoon of soy sauce with 1 tablespoon of water and mix well. Then, add 1 tablespoon of oligodang for sweetness, followed by 0.5 tablespoon of sesame oil and 0.3 tablespoon of toasted sesame seeds for a nutty aroma. You can adjust the amount of oligodang to your preference; feel free to add a little more if you enjoy a sweeter taste.
Step 2
Now, it’s time to cook the noodles. Fill a pot with plenty of water (about 3-4 cups by paper cup measure) and bring it to a rolling boil over high heat. Once the water is boiling vigorously, add 100g of somen noodles. As the noodles cook, starch may cause foam to rise to the surface. At this point, have 1 cup of cold water ready to pour in. This will help the foam subside and make the noodles perfectly chewy. Use chopsticks to gently lift and lower the noodles in the water while they cook. (This usually takes about 3-4 minutes; refer to the package instructions for exact cooking times.)
Step 3
Once the somen noodles are cooked, immediately rinse them under cold running water to remove excess heat and firm up their texture. Drain them thoroughly in a colander. It’s crucial to remove as much water as possible, as any remaining water could dilute the dressing and make the dish less flavorful.
Step 4
Place the well-drained somen noodles into the bowl with the prepared soy sauce dressing. Put on a pair of disposable gloves or use kitchen tongs, and gently toss and mix the noodles with the dressing until they are evenly coated. Ensure the sauce penetrates every strand of noodle for the best flavor. (Note: 100g of somen noodles is typically a good portion for two children. If you’re cooking for more people, simply scale up the dressing ingredients proportionally based on this recipe.)
Step 5
Finally, generously sprinkle dried seaweed flakes (gim) over the top according to your preference, and your delicious Soy Sauce Bibim Guksu is ready! Enjoy this simple yet incredibly flavorful dish.
