Kimchi fried rice, a beloved national dish! Here’s how to make it even more delicious using Chef Baek Jong-won’s secret techniques. This perfect recipe is ideal for breakfast, a satisfying lunch, a late-night snack, a casual weekend brunch, or even a thoughtfully prepared lunchbox. The fantastic harmony of a bowl of rice and well-fermented kimchi will capture your taste buds!
Basic Ingredients- 1 bowl of warm rice
- 1/2 bowl of well-fermented kimchi (finely chopped)
- 60g mashed ham (use canned ham, mashed or finely minced)
- 2 button mushrooms (thinly sliced)
- 1/2 stalk of green onion (finely chopped)
Seasoning Ingredients- 1 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp gochugaru (Korean chili flakes)
- A little olive oil (for stir-frying vegetables and ham)
- 1 Tbsp perilla oil (or sesame oil)
- 1 Tbsp sesame seeds (ground)
- 1 Tbsp soy sauce

Cooking Instructions
Step 1
First, prepare the essential ingredients that will determine the taste of your kimchi fried rice. It’s best to have the rice warm, as this prevents it from clumping when stir-frying. Finely chop the well-fermented kimchi, and mash the ham with a fork or mince it finely. Clean and thinly slice the button mushrooms, and finely chop the green onion.
Step 2
Measure out the seasoning ingredients that will add wonderful flavor to your kimchi fried rice. Prepare the soy sauce, sugar, and gochugaru in equal proportions. Having the perilla oil and sesame seeds ready will make the cooking process much smoother.
Step 3
Heat a frying pan with a little olive oil over medium-low heat. Add the chopped green onions and stir-fry for about 1-2 minutes until fragrant, creating scallion oil. (Tip: The oil used for stir-frying vegetables and ham doesn’t have to be olive oil. Vegetable oil or canola oil can also be used.)
Step 4
Once the scallion aroma is released, add the mashed ham and thinly sliced mushrooms. Continue to stir-fry over medium-low heat for about 1-2 minutes until the ham’s fat is slightly rendered and the mushrooms are tender. The ingredients will cook evenly, enhancing the delicious flavors.
Step 5
Now, add the well-fermented kimchi and stir-fry over medium-low heat for about 1 minute, until the kimchi softens slightly and some moisture evaporates. The sourness of the kimchi will mellow and develop a rich umami flavor as it cooks.
Step 6
Once the kimchi is sufficiently stir-fried, add 1 Tbsp of soy sauce and 1 Tbsp of sugar. Keep the heat on medium-low and stir-fry for about 30 seconds until the soy sauce and sugar are well combined with the kimchi. The soy sauce may slightly caramelize on the bottom of the pan, adding more depth of flavor.
Step 7
Next, add 1 Tbsp of gochugaru to impart a spicy kick and vibrant color. Stir-fry for another 30 seconds. Be careful not to overcook the gochugaru, as it can burn.
Step 8
Now, add the 1 bowl of warm rice you prepared. Using a spatula, break up any clumps of rice and ensure it mixes evenly with all the ingredients. Stir-fry over medium-low heat for about 1 minute, ensuring each grain of rice is coated with the seasonings.
Step 9
Just before turning off the heat, or immediately after, drizzle in 1 Tbsp of perilla oil. The nutty aroma of the perilla oil will elevate the taste of your kimchi fried rice. (Tip: If you don’t have perilla oil, you can substitute it with sesame oil. Add sesame oil after turning off the heat to preserve its fragrance.)
Step 10
Finally, add 1 Tbsp of sesame seeds and gently stir-fry once more to ensure everything is well combined. Your delicious kimchi fried rice is now complete! Enjoy this fantastic blend of savory and umami flavors.

Serve your perfectly cooked kimchi fried rice in an attractive bowl. (Tip: I’ve topped mine with quail eggs here, but a fried egg or soft scrambled eggs are also delicious additions. Alternatively, serving it plain allows you to fully appreciate the pure flavor of the kimchi fried rice, making for a wonderful meal!)
