Essential Ingredients- 1 (300g) Ribeye Steak (choose a thick cut)
- Coarse salt, a pinch (for seasoning)
- Black pepper, a pinch (for seasoning)
- 1-2 sprigs fresh rosemary
- 1 knob unsalted butter (approx. 10-15g)
- Plenty of olive oil (for pan coating)
Cooking Instructions
Step 1
Before grilling, pat the steak dry thoroughly with paper towels. Removing excess moisture ensures a crispier exterior. Then, generously season both sides of the steak with coarse salt and freshly ground black pepper. Be sure to season well according to the thickness of the meat for proper flavor.
Step 2
Heat your frying pan over high heat until it’s very hot. Once the pan is properly heated, add a generous amount of olive oil. When the oil is shimmering slightly, carefully place the steak in the pan. Sear each side over high heat for about 1-2 minutes until a beautiful golden-brown crust forms. This searing process locks in the juices.

Avoid flipping the steak too often, as this can release precious juices. After searing both sides to a crisp, reduce the heat to medium-low. At this point, add the fresh rosemary sprigs to the pan; the aroma will release beautifully. Including the sprigs infuses a subtle fragrance. Now, continue cooking the steak slowly over medium-low heat. It’s a great time to add vegetables like mushrooms, asparagus, or garlic to cook alongside the steak. Final step! When the steak is nearly done, add a knob of unsalted butter to the side of the pan. As the butter melts, tilt the pan and spoon the melted butter over the steak several times (this is called basting or ‘arroser’). The butter coating will add richness and a beautiful shine. Once the steak reaches your desired doneness (medium-rare, medium, etc.), immediately remove it from the pan and place it on a plate. Resist the urge to cut into it right away!
