When washing the rice, it’s best to rinse it in pre-filled water. If you’re using new-season rice (haep-ssal), washing it too much can affect the taste. So, gently rub the rice grains together and wash them about two to three times, being careful not to break them.

A crucial step for making perfect pot-cooked rice is soaking the rice. If the rice isn’t soaked enough, the grains might turn out hard even if you cook it for the right amount of time. Instead of soaking the rice submerged in water, place it on a sieve or colander to allow for better air circulation while it soaks. Let it soak for about 10 minutes.

Next, prepare the kelp broth that will be used as cooking water. While rice cooked with plain water is delicious, using kelp broth will add an extra depth of flavor. You don’t need to boil the kelp; simply rinse the dried kelp under running water and let it sit in the water for a while. This will create a flavorful kelp broth.

As an optional ingredient, prepare some green onions. Finely chopped green onions sprinkled on top of the rice add a wonderful aroma that enhances the overall flavor of the pot rice. While not essential, adding them makes the dish even more enjoyable.
