Step 1
Introducing our perfectly tender Pork Suyuk, a dish that’s free from any unpleasant odors. It’s absolutely divine when enjoyed warm with Kimchi on a chilly day!
Step 2
Prepare the pork for Suyuk by cutting a 1kg piece into two equal portions. This helps the meat cook evenly and absorb flavors better.
Step 3
In a large pot, add 3 Tbsp of Doenjang and a generous amount of whole peppercorns. Pour in enough water to fully submerge the pork. Bring it to a boil, then reduce to medium heat and simmer for 10 minutes. Doenjang is excellent for removing pork’s gamey smell and enhancing its flavor.
Step 4
Now, let’s add the ingredients that will completely neutralize any gamey odors. Add one medium chopped onion, plenty of green onions, 20 whole garlic cloves, 1 tsp of instant coffee powder, and a pinch of turmeric powder. These ingredients will work together to leave the pork smelling fresh.
Step 5
Cover the pot and let it simmer for about 40 minutes to 1 hour, or until the pork is tender. To check for doneness, insert a chopstick into the thickest part of the meat. If clear juices run out with no pinkness, it’s ready. Be careful not to overcook, as this can make the meat tough.

Once the pork is nicely boiled, let it cool slightly on a cutting board. Then, slice it as thinly as possible. Thin slices ensure a melt-in-your-mouth texture. If your knife isn’t cutting smoothly, try rinsing it under hot water.

Arrange the sliced Suyuk attractively on a platter. Serve it alongside your freshly prepared whole Kimchi. Adding accompaniments like salted shrimp, ssamjang (Korean dipping sauce), garlic slices, and fresh lettuce wraps will make your meal even more complete.
