Perfect New York Strip Steak at Home

When a craving for a delicious steak hits after a workout, this recipe is perfect for you. I aimed for a tender and moist medium-rare, but unfortunately, I overcooked it in the oven and it turned out ‘well done.’ Based on my experience, I highly recommend adjusting the oven time to just 10-15 minutes. (I accidentally left it in for 40 minutes… 😭) Don’t make the same mistake!

Steak & Herb Butter

  • New York Strip Steak 0.58 lb (approx. 260g)
  • Olive Oil 5 Tbsp
  • Unsalted Butter 1.5-2 Tbsp
  • Garlic cloves, generously (for infusing the butter)

Side Vegetables

  • Fresh Broccoli 200g
  • Carrots, generously (cut into bite-sized pieces)

Cooking Instructions

Step 1

First, prepare all your ingredients. For the garlic, lightly smash it with the side of a knife or slice it thinly. This helps its aroma infuse beautifully when sautéed with butter, creating a richer flavor.

Before you start cooking the steak, preheat your oven to 370°F (approximately 188°C). In a sturdy frying pan, heat 5 tablespoons of olive oil over medium-high heat. To test if the oil is hot enough, carefully flick a tiny drop of water into the pan. If it sizzles and evaporates immediately, it’s at the right temperature.

Once the pan is properly heated, carefully place the steak in it. You should hear a satisfying ‘sizzle’! Sear the first side of the steak intensely for about 40-50 seconds to develop a delicious crust.

After searing the first side, flip the steak and sear the other side for about 40 seconds. You’ll start to see a beautiful brown color develop on the surface. If your pan tends to burn easily, adjust the heat accordingly and sear both sides to a similar color, as shown in the reference image, paying attention to your specific pan.

Once both sides are nicely seared, reduce the heat slightly and add 1.5-2 tablespoons of butter to the pan, letting it melt over the steak. The butter will add a wonderful richness.

Immediately after adding the butter, toss in all the prepared garlic cloves. The butter and garlic will meld together, infusing the steak with an aromatic flavor.

As the garlic begins to release its aroma in the butter, transfer the steak to an oven-safe frying pan before the garlic burns. You can line the pan with foil if you wish, or leave it uncovered.

There will still be flavorful butter left in the pan where the steak was cooked. Use this delicious butter to sauté your side vegetables (broccoli, carrots). If your pan is still hot, you might not even need to turn the heat back on to cook the vegetables.

Transfer the vegetables, nicely coated in the buttery goodness, into the oven-safe pan with the steak.

Now, place the pan with the steak and vegetables in the top rack of your preheated oven. **For a tender medium-rare steak, it is crucial to bake for only 10-15 minutes.** This time can vary depending on the thickness of your steak and your oven’s performance, so it’s a good idea to check periodically.
