Steak Ingredients
  • Premium Korean beef tenderloin, cut for steak (2.5-3cm thick)
  • Coarse sea salt (freshly ground black pepper can be added for extra flavor)
  • Freshly ground black pepper
  • Extra virgin olive oil
  • Unsalted butter
  • Side vegetables (asparagus, mushrooms, onions, etc., according to preference)

Cooking Instructions

Step 1

Remove the Korean beef tenderloin from the refrigerator and gently pat it dry with paper towels to remove excess moisture. Generously season both sides of the steak with coarse sea salt and freshly ground black pepper. Drizzle with olive oil and coat evenly. Allowing the seasoned steak to rest at room temperature for 30 minutes to 1 hour will result in a more tender and flavorful steak. (It’s important to let it come to room temperature rather than cooking it straight from the fridge!)

Step 2

Heat a stainless steel or cast-iron skillet over high heat until it’s smoking slightly. Add a little olive oil to the hot pan, then carefully place the seasoned steak into the pan. You should hear a satisfying ‘sizzle’ – this indicates the pan is properly preheated. Searing the first side well helps to lock in the juices.

Step 3

Once the first side is a rich, appealing brown, flip the steak. Sear the other side similarly. Starting from the second flip, reduce the heat to medium-low to cook the steak evenly to your desired doneness, considering its thickness. (For a 2.5cm thick steak, about 2-3 minutes per side).

Step 4

When the steak is nearing your preferred level of doneness, add a piece of unsalted butter to one side of the pan. As the butter melts, add your prepared side vegetables like asparagus, mushrooms, and onions next to the steak to cook them in the flavorful butter. The vegetables will absorb the buttery goodness, making them even more delicious.

Step 5

Now, reduce the heat to low. Spoon the melted butter and pan juices over the steak repeatedly – this technique is called ‘basting’ or ‘arrosage’. This process infuses the steak with a deeper butter flavor and richness, creating a phenomenal taste. (Repeat for about 1-2 minutes).

Step 6

Once the steak has reached your desired doneness, immediately remove it from the pan and place it on a serving plate. Loosely tent it with aluminum foil and let it rest for 2-3 minutes. This resting period allows the juices to redistribute throughout the meat, ensuring a supremely moist and tender steak.
