Fried rice is the perfect way to use up leftover vegetables in your fridge! On weekends, I often crave simple, satisfying one-bowl meals like this. Feel free to customize it with your favorite vegetables, ham, sausage, eggs, or chicken breast for a delicious and personalized dish. Your taste buds will thank you!
Fried Rice Ingredients- 1-2 Tbsp cooking oil
- 1/2 can Spam or ham (small size)
- 1 medium potato
- A small amount of green onion (white parts preferred)
- 1/3 carrot
- 1 mushroom (e.g., king oyster)
- 2 pinches of salt
- 2 Tbsp soy sauce
- 1.5 bowls of cooked rice (warm)
- 1/4 onion
- 1-2 eggs (optional)
- 1/2 tsp minced garlic
- 1/2-1 Tbsp sesame oil
Cooking Instructions
Step 1
First, prepare all your vegetables and ham for the fried rice. Finely dice the potato, carrot, and mushroom into pieces similar in size to your rice grains, or slightly larger for a bit of bite. Finely chop the onion. Slice the white parts of the green onion thinly. (Tip: Cutting ingredients into similar sizes ensures they cook evenly!)
Step 2
Heat a pan over medium heat. Add 1-2 tablespoons of cooking oil. Add the sliced green onions and stir-fry for about 1 minute until fragrant, being careful not to burn them. This step creates a delicious green onion oil that enhances the overall flavor.
Step 3
Add the potatoes and carrots to the pan, as they take a bit longer to cook. Sprinkle in 2 pinches of salt to season and stir-fry over medium-high heat for about 2-3 minutes. Adding 2 tablespoons of water during this stage will help the vegetables cook evenly without sticking.
Step 4
Once the potatoes and carrots are slightly tender, add the diced Spam (or ham) and mushrooms. Continue to stir-fry for another minute. The fat from the ham will render out, adding richness and flavor to the vegetables.
Step 5
Add the warm cooked rice (about 1.5 bowls) to the pan. Pour the 2 tablespoons of soy sauce around the edges of the pan. Letting the soy sauce sizzle and caramelize slightly on the hot pan will deepen its flavor. After about 30 seconds, gently break up the rice and mix all the ingredients together thoroughly. Continue to stir-fry for another 2 minutes until the rice is fluffy and well-combined.
Step 6
Turn off the heat. If you’d like an extra nutty aroma, drizzle in 1/2 to 1 tablespoon of sesame oil. Taste the fried rice and add a tiny pinch of salt if needed to adjust the seasoning.
