Park Se-ri’s Egg Salad
The Ultimate Egg Salad Recipe You’ll Use Forever, Inspired by Park Se-ri
Learn how to make Park Se-ri’s famous egg salad at home, as featured on the popular TV show ‘I Live Alone’! This recipe, originally made with 40 eggs, is perfect for stuffing into soft rolls or layering in sandwiches. While store-bought egg salad is convenient, making it yourself allows for a fresher, more generous portion. Its incredibly addictive flavor makes it an ideal choice for breakfast or a simple snack. Let’s get started on this easy and delicious egg salad!
Ingredients- 100g ham, finely diced
- 1/2 onion, finely minced
- A pinch of carrot, finely minced
- 4 hard-boiled eggs
- 1/2 cucumber, finely diced
- 2 Tbsp corn kernels
- A pinch of black pepper
- 5 Tbsp mayonnaise
Cooking Instructions
Step 1
First, prepare your vegetables. Finely mince the onion and carrot. You can dice the cucumber as you prefer. For an extra crisp texture, similar to Park Se-ri’s method, you can lightly salt the diced cucumber, let it sit for about 10 minutes, and then thoroughly squeeze out the excess water. If you’d like to add mashed potato, you can boil and mash one and mix it in, though it’s omitted in this version. Even with these simple ingredients, the flavor is superb.
Step 2
Next, mash the hard-boiled eggs using a tool like a fork or a potato masher until they are nicely broken down. Using soft-boiled eggs will give a creamier, richer texture, but hard-boiled eggs work perfectly fine too. Using more eggs enhances the savory flavor. Four eggs yield a generous portion suitable for a family of one or two.
Step 3
Add all the prepared vegetables to the mashed eggs. If you find raw onion too pungent, you can soak the minced onion in cold water for about 5 minutes, then drain it well before adding it to the mix. This helps mellow out its sharpness.
Step 4
Finally, add the mayonnaise and a pinch of black pepper. Mix everything together thoroughly until well combined. That’s it – your delicious egg salad is ready! It’s incredibly simple to make. Note that with the amount of mayonnaise used, this isn’t typically considered a diet-friendly dish.
